Cocktail Corner: Classic Tom Collins Recipe for Father’s Day

Happy Father's day everyone!  Today is always a little rough for me because I lost my dad about 13 years ago but I've decided to honor my father by sharing the recipe for his favorite drink!  My dad's favorite drink was none other than classic Tom Collins. It was the first drink he ordered for me when I became of legal drinking age and sadly it was the last drink that we ordered the last day that I saw him, a week before he died.

My dad always enjoyed a good steak so our family would often go to a steakhouse like Applebee’s or Longhorn’s and order a juicy steak with a Tom Collins to wash it down with. The citrusy Tom Collins pairs really well because it cuts through the savory and buttery flavor of a great steak. I'm actually not a big fan of gin I do enjoy it in this drink.  Sometimes I'll order it when I'm out and I get the strangest looks because it’s such an Old-Fashioned cocktail. But I can't help it, it reminds me of my dad - I mean it literally tastes like good memories.

Today I made dad’s favorite drink and poured it into his signature highball glasses.  He retired from Norfolk Southern after several decades of working on the railroad and was gifted these glasses that he was very, very proud of.  He never got the chance to use them and they sat in our china cabinet for years.  I decided to pull them out and use them for a fitting tribute to my favorite guy!

Here’s the recipe!

Ingredients:

1.5 Ounces of Simple Syrup
1.5 Ounces of Gin (or 1 jigger) I used New Amsterdam but any is just fine
1 Ounce of Lemon Juice
1 Ounce of Lime Juice
Club Soda (enough to fill to the top of the glass after the other ingredients)
Maraschino Cherries & Orange Slices for garnish.

Instructions:

This drink is one that you typically “build”- meaning it’s usually made one at a time in a glass, starting with ice and then adding the ingredients in the order that they are listed in the recipe and then shake, drain, stir or whatever.  This one just calls for a quick stir with your bar spoon after adding all of the ingredients and that’s it! This recipe makes one glass, so multiply as needed. You can also adjust the mixers as much as you’d like.  I like drinks that are a bit tart but if sweet is more your thing, you can up the simple syrup and down the Lemon/Lime juice.  Play around and find what works for you!
